Island East Markets - Double Chocolate Muffins

現身處芬蘭北極圈內 Inari, 每日活動係起身食早餐,晚上等北極光
中間時間最適宜休息
加上呢一刻b 病到要臥床 (b對不起, 我竟洩露了)
我只好獨自欣賞窗外雪景, 邊寫blog




出發前一日在Island East 擺檔
3月17日是St. Patrick's Day
所以以三葉草做主題佈置



今次蛋糕款式一共十五項
照舊有幾種新產品
其中一款 - Chocolate chips muffin




係。。。話過唔再整muffin
但muffin 好襯Island East 呢類Farmers' market
而且我地之前揾到批好型的muffin 杯嘛。。。
muffin 終於有脆面
仲好夠朱古力味
有一刻衝動想留來做第日早餐
今次有六檔賣bakery 產品每一檔都充滿特色
JOMB有幸在五點前, 把所有產品賣出 :)
一定係一班吃完盛宴的朋友出盡了力

為增加朱古力味及顏色
我們從麵粉中減去一tablespoon, 轉而加入1 tablespoon的朱古力粉

Double Chocolate muffin
Makes 8 giant muffin



Ingredients:
3 oz (85g) unsweetened chocolate
1 cup granulated sugar
1/2 cup (113g) unsalted butter, softened
2 eggs
1/2 cup sour cream
1/2 cup milk
2 cups all-purpose flour minus 1 tablespoon
1 tablespoon cocoa powder
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
340g semisweet chocolate chips
Additional semisweet chocolate chips, for topping muffins

Instructions
:

1. Preheat oven to 190 C. Line muffin pan with muffin liners

2. Melt chocolate in double boiler until smooth. Set aside

3. In a small bowl, stir together flour, cocoa powder, baking powder, baking soda, and salt

4. Cream sugar and butter. Beat in eggs, then sour cream and milk. Add dry ingredients.

5. Stir in melted chocolate, then chocolate chips.

6. Fill each muffin cup about three-quarters of the way full with batter, and sprinkle some chocolate chips over top of batter

7. Bake for about  25 minutes, or until a toothpick inserted into the center comes out clean. Transfer muffins to wire rack to cool completely.
