It's Officially December! - Chocolate Caramel Slices


 



近來忙趕製檔口的聖誕裝飾及搜尋聖誕食譜
翻看家中一疊疊cookbook, 每看到Caramel slice, 都會十分黯然
在眾多澳洲甜品中, 最得歡心的就是她, 鍊奶怪的我, 對由鍊奶做成的焦糖餡著迷
過往在澳洲做這甜品時得心應手, 回到香港試做過兩次, 焦糖都沒法成形
:(
自此產生恐懼

和同樣是焦糖怪的Aries 即興來個Bake Day, 今次專程上網翻查不同食譜不同做法, 希望在2013年前成功做好
終於明白失敗的原因, 就是欠缺Aries 的耐性
他把焦糖糊煮了很久很久
說要把什麼什麼蒸發掉

過往把焦糖糊倒落餅底之後, 剩餘在煲內的少許焦糖都是稀的
但今次倒完後, 焦糖糊迅即變煙韌
看到了曙光~~~!
及看到他把整隻匙舔乾淨!
我當然不遑多讓, 五隻手指揩盡焦糖

當日用gum paste 搓好些聖誕裝飾
就順道替成型的caramel slice 拍個聖誕寫真

Caramel Slice

*注意此甜品真的很甜很甜, 建議倒薄薄的焦糖餡*
*此餅底基本上沒有味道, 可中和焦糖的甜味*

Ingredients


Base


115g unsalted butter
½ cup all-purpose flour
½ cup self-raising flour
½ cup desiccated coconut


Caramel filling


400g can sweetened condensed milk
2 tbsp golden syrup or light corn syrup
1/3 cup light brown sugar, firmly packed
55g unsalted butter

Topping

150g dark cooking chocolate
1.5 teaspoons vegetable oil

Method

1. Preheat oven to 160C

2. Line a 8 x 8 inch (20x20cm) square cake tin with parchment paper

3. To make the base, melt the butter and add all dry ingredients. Press the mixture evenly into the base of the pan.

4. To make the caramel filling, combine the filling ingredients in a saucepan and place over moderate heat, stirring continously until it boils

5. Spread the filling over the base and place in the oven

6. Bake for 15-20 minutes or when beginning to colour around the edges. Remove and leave to cool before icing.

7. To make the topping, place the chocolate and oil in a heatprrof bowl over a saucepan of simmering water and stir until melted. Spread the chocolate mixture over the caramel and refrigerate until set. Slice to serve
